‘Slutty’ Brownies

Even just the name of these sounds naughty ….eating a few definitely is!!! I LOVE these as they are totally decadent and unlike many brownies that have a somewhat bitter taste, these have a fine balance of sweet and bitter. Make sure you don’t overcook them and you have a lovely gooey wicked little treat 😉

 

 

 

INGREDIENTS

For the Cookie Dough layer:

  • 125g butter
  • ¼ cup brown sugar
  • ¾ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cup plain flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 cup chocolate chips (I use a combination of white, milk and caramel bits)

For the Brownie layer:

  • 200g butter
  • 1 ¼ cups white sugar
  • ¾ cup cocoa powder
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ½ cup plain flour

 For the Oreo layer:

  • 1 packet of Oreo Cookies (I use a packet + 2)

METHOD

  1. Preheat oven to 160’C

For the Cookie Dough layer:

  1. Cream together the butter and sugars in a mixer.
  2. Add the eggs and vanilla and mix well.
  3. Add the flour, baking soda and baking powder and mix on low until everything is incorporated.
  4. Fold in the chocolate chips.
  5. Press into the bottom of a 20 * 20cm pan lined with glad bake.
  6. Layer as many oreos that will fit on top of the cookie dough in one single layer.

For the Brownie layer:

  1. In a medium saucepan, melt the butter over medium high heat.
  2. Add the sugar and cocoa powder once the butter is melted.
  3. Whisk to combine and remove from heat.
  4. Add the vanilla and eggs and continuously whisk until the eggs are combined.
  5. Add the flour and continue to mix.
  6. Pour the brownie batter on top of the Oreo layer and make sure it evenly layers on top.
  7. Bake for 25-30 minutes. I prefer this recipe if the centre is still a bit gooey. If you prefer a firmer brownie more cooking time may be needed.
